Long lasting butcher block wood countertops can be cleaned with mineral oil on a monthly basis. Use marine oil for non butcher block wood countertops. Stains can be easily removed with lemon juice, marks and burns can be sanded out of wood.
Marble counters are higher maintenance and susceptible to etching. Use marble polish to buff out any chemical corrosion. Food stains can be cleaned using a water based paste of baking soda and dish soap.
Scratches on stainless steel countertops can be buffed out with an abrasive pad. Avoid cast iron pan contact with the counter to prevent rusting. If you do have any rust stains use a paste of lemon juice and baking soda to eliminated them.
